Finally Updating!


Okay, so I'm FINALLY updating the blog... This post is mostly food and recipes (basically the reason this blog exists)!

I started making green smoothies to get more greens in. I make them mostly from frozen blueberries, spinach, kale, fruit juice or whatever I have lying around. I made this one at work out of fruit and veggies that needed to be eaten asap:



It's made from green grapes, a grapefruit, broccoli, celery, a lemon, and ginger green tea. Very refreshing!


Below are some plain almond meal cookies I made for the purpose of putting this frosting on...guess what it's made of?!


Avocados! The frosting is made from one raw avocado, vanilla extract, cocoa powder and agave syrup blended together. It was rich and tasty, you'd never guess what was in it. The only problem is that it won't keep for more than a few hours.

I've been trying out several frostings, the easiest and most authentic is vegan margarine whipped up with vanilla and powdered sugar (and cocoa for chocolate). For a friends birthday party I made brownies with a frosting made from coconut butter, macadamia nut butter, vanilla, cocoa, and agave. It was very rich and nutty, but delicious. The brownies were easy, I bought an egg free mix from whole foods and substituted the eggs for apple sauce, the butter for vegetable oil and the milk for almond milk. I don't think anyone could tell the difference.

I recently went to Disneyland armed with an array of vegan meals and snacks. Below I'm eating Mrs. May's Cashew Crunch.


I also brought grapefruit slices, carrot, celery, & zucchini sticks, a hummus, lettuce, and tomato wrap, chocolate pudding made from cashews, coconut milk, agave, and cocoa which I sliced a banana into at the end of the day and LOTS of water.

One of my favorite meals for entertaining is a simple Mexican inspired dip extravaganza. I bought the salsa from Trader Joe's, their mild salsa and their salsa especial both in the refrigerator section. The guacamole is made from two avocados, an onion, garlic, some salsa especial, nutritional yeast, lime juice, salt, and pepper. The nacho cheese is my cashew cheese mixed with salsa especial and a tiny bit of cayenne pepper. The cheese can also be used to make quesadillas if you use more cashews and less milk. Just spread it between two tortillas and heat. Not pictured are black beans or Trader Joe's vegan black bean soup which makes an excellent dip. So yummy.
