Five a day...

The past few weeks I've been eating five servings of veggies per day plus one to two servings of fruit and I gotta tell you... I feel GREAT! The eating experience has evolved even further for me, even if I choose to splurge on lets say a bean and rice burrito I don't get that sick heavy feeling afterward and I know exactly when I've had enough. My body and I are communicating much more efficiently. I also dropped a few pounds which isn't the point of eating well, but I'm not going to complain.

Before we get to the veggies... I made raw chocolate from a recipe posted by Raw Goddess Healthy, Carmi's Dark Chocolate

I used agave nectar instead of maple syrup and I added about 1/8 cup cacao nibs so mine had a bit of a crunch! I may never buy chocolate again, these were so tasty!

Now on to the veggies! I apologize for the poor photo quality-these were all taken with my phone.

Cucumbers are a staple, light and refreshing. These have been sprinkled with sea salt and pepper.

Plain snow peas

Steamed broccoli with Daiya cheese melted on top, it looks a bit disgusting but it was really quite a treat!

Another staple, I've been eating this almost every day. A baked sweet potato with cinnamon, apple sliced and Whole Soy & Co's plain soy yogurt.

Yesterday I made pumpkin oatmeal. I mixed boiled and mashed pumpkin in with oatmeal while it was cooking, added pumpkin spice and topped it with cinnamon and brown sugar ...Mmmmm

I'm so excited about my five a day personal revolution. I start the day with plain fruit, and I've been buying things that are special and/or exotic so I feel like I'm treating myself. So far I've eaten pineapple, watermelon, grapefruit, raspberries, and pomegranate. Having fruit for breakfast really is brilliant. After the body becomes accustomed to it, it fills you up and gives you a nice clean energy. About an hour after fruit I'll eat something else and continue to eat every few hours. I've been eating about three raw veggies and two cooked veggies. Today for example I ate raspberries, a green salad (two servings), cucumber and avocado wrapped in nori, a sweet potato, and steamed green beans. Yesterday I ate pomegranate, raw green beans, a small salad, carrot sticks, boiled pumpkin, and steamed broccoli. I can't even tell you how satisfying it is both mentally and physically, I HIGHLY recommend that everyone make a point of eating more fresh vegetables!
